1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp ground cinnamon
½ tsp salt
1½ cups mashed FRÜT frozen bananas
¼ cup unsalted butter, melted & slightly cooled
¼ cup canola/vegetable oil
¾ cup packed light brown sugar
1 large egg, at room temperature
1 tsp pure vanilla extract


1. Allow bananas to defrost (just on the counter) for roughly 1 hour – they should be soft but not runny
2. Preheat oven to 180°C
3. In a medium bowl, whisk together flour, baking soda, salt & cinnamon
4. In a large bowl, mash up defrosted bananas (use fork/masher/mixer), stir in melted butter & oil until combined, then stir in sugar, egg & vanilla extract until mixture is smooth
TIP: at this stage you can add in any extras: chopped pecans, chocolate chips, or even blueberries
5. Add dry mixture to the wet mixture – make sure not to overmix (this will lead to flat, heavy bread)
6. Butter bread pan and pour mixture in
7. Bake for 50-65 mins, or until a toothpick inserted into the centre of the bread comes out clean
8. Once ready, set pan on a wire cooling rack for 10 mins, remove from the pan, and let the bread cool slightly before slicing
