Blueberry Gazpacho

Blueberry Gazpacho

Ingredients:

The Gazpacho

350g

FRÜT frozen blueberries

450g

seedless black grapes

1/2 cup

white grape juice

2 tbsp

honey

2 tsp

lemon zest

2 tbsp

fresh lemon juice

1/4 tsp

salt

Mint leaves (optional)

Main ingredient:

Method:

Step 1:

Remove the stems from the grapes, rinse and pat dry with paper towels.

Step 2:

Place the grapes and frozen blueberries into a large saucepan over a medium to high heat.

Step 3:

Add the grape juice and honey, bring to the boil.

Step 4:

Reduce the heat to medium and let the mixture simmer for 15 minutes, stirring occasionally.

Remove from the heat and let it stand for 10 minutes.

Step 5:

Place the mixture into a food processor and blend until smooth.

Step 6:

Strain, discard any solids and let it chill for 2 hours.

Step 7:

Stir the zest, juice and salt into the chilled mixture.

Step 8:

Ladle approximately 1/2 cup into x 5 chilled bowls and garnish with mint and additional lemon zest if desired.
