Jammin' with Apricots

Ingredients:

The Jam

2 cups

Früt dried apricots

3 cups

Water

1 ½ cups

Granulated sugar

2 tbsp

Lemon juice

1 tsp

Vanilla extract (optional)

Main ingredient:

Method:

Step 1:

Soak the Apricots: Place the dried apricots in a bowl and cover with water. Let them soak for at least 4 hours or overnight until they are plump and soft.

Step 2:

Blend: Drain the apricots, reserving the soaking water. Blend the apricots with 1 cup of the soaking water until smooth, or leave slightly chunky for a textured jam.

Step 3:

Cook the Jam: In a large saucepan, combine the blended apricots, remaining soaking water, sugar, and lemon juice. Stir over medium heat until the sugar dissolves.

Step 4:

Simmer: Bring the mixture to a gentle boil, then reduce the heat and simmer for about 20-30 minutes, stirring occasionally, until the jam thickens.

Step 5:

Optional Flavour Boost: Stir in vanilla extract during the last few minutes of cooking for added warmth and depth of flavour.

Step 6:

Test the Consistency: Place a small dollop of jam on a chilled plate. If it wrinkles slightly when pushed, it’s ready. If not, cook for a few more minutes and test again.

Step 7:

Jar It Up: Pour the hot jam into sterilised jars, leaving about ½ inch of space at the top. Seal tightly and let cool to room temperature.
