Mango Chutney

Ingredients:

1kg

Früt frozen mango

4 tbsp

Früt frozen ginger

X2

Star anise

X1

Cinnamon stick

X6

Cardamom pods, depodded

2 tbsp

Coriander seeds

1 tsp

Fennel seeds

1 tbsp

Red chilli flakes

2 tbsp

Olive oil

X1

Small red onion, diced

X3

Cloves garlic, crushed

250ml

White vinegar

1 cup

White sugar

1 tbsp

Salt

Main ingredient:

Frozen Mango

Method:

Step 1:

In a pan over a medium heat, toast all the spices until fragrant; be sure not to burn them.

Step 2:

Then in a large pot, pour in the olive oil and sauté the onion, garlic and ginger for 2-3 minutes.

Step 3:

Add in the mango, vinegar, sugar, salt and the toasted spices and cook for 20 – 30 minutes until it forms a jam texture.

Step 4:

Scoop out the star anise and cinnamon sticks, then spoon into jars, seal and keep in the fridge.

Note:

If you want to keep them on the shelf, then you will need to place the sealed jars in boiling water.
