Früt frozen passion fruit purée with seeds (thawed)

1 cup

Icing sugar

½ tsp

Vanilla extract for a creamier glaze (optional)

1 cup

Cake flour

½ tsp

Baking powder

¼ tsp

Baking soda

½ cup

Sugar

¼ tsp

Salt

½ cup

Buttermilk or plain yoghurt

Egg

2 tbsp

Melted butter or neutral oil

1 tsp

Vanilla extract

½ cup

Sugar

¼ tsp

Salt

½ cup

Buttermilk or plain yoghurt

Method:

Step 1:

Preheat oven to 180°C (350°F). Grease a doughnut pan.

Step 2:

Whisk together the flour, baking powder, baking soda, salt, and sugar in a large bowl.

Step 3:

In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract.

Step 4:

Gently fold the wet ingredients into the dry ingredients until they are combined. Be careful not to overmix.

Step 5:

Spoon or pipe the batter into the prepared doughnut pan, filling each cavity about ¾ full.

Step 6:

Bake for 10–12 minutes until the doughnuts are light golden brown.

Step 7:

Remove from the oven and let the doughnuts cool completely in the pan before icing.

Step 8:

For the icing: In a medium bowl, whisk together the icing sugar and passionfruit purée until smooth. Add more passionfruit purée, a teaspoon at a time, if a thinner consistency is desired.

Step 9:

Once the doughnuts are completely cool, dip each doughnut into the passionfruit glaze.

Step 10:

Place the glazed doughnuts on a wire rack to allow the icing to set.
