Spinach & Kale Winter Soup

Ingredients:

2 cups

Früt frozen spinach

1 cup

Früt frozen kale

1 tsp

Früt frozen ginger (optional kick)

1 tbsp

Olive oil

X1

Small onion, chopped

X1

Small potato, peeled and chopped

3 cups

Veggie stock

Salt & pepper to taste

Optional

Squeeze of lemon

Optional

Früt coconut milk

Main ingredient:

Frozen Spinach

Method:

Step 1:

Heat oil in a pot and sauté onion until soft. Add ginger and cook for 1 more minute.

Step 2:

Add potato, spinach, kale and stock. Simmer for 15–20 minutes until the potatoes are soft.

Step 3:

Blend until smooth, season to taste, and swirl in coconut milk if desired.

Step 4:

Serve warm with toast or croutons!
