Pineapple & Mango Salsa

Ingredients:

1 cup

Früt frozen mango chunks

1 cup

Früt frozen pineapple chunks

½

Red onion, finely diced

X1

Small red chilli, finely chopped (optional, for heat)

X1

Large tomato (seeds removed, chopped)

X1

Juice of whole lime

½

Zest of whole lime

Handful

Fresh coriander, chopped

To Taste

Salt and black pepper

Optional

Drizzle of olive oil for richness

Method:

Step 1:

Roughly chop frozen mango and pineapple into smaller pieces while still frozen (this gives it a nice texture and keeps it cool).

Step 2:

In a large bowl, combine the frozen fruit with red onion, tomato, chilli, lime juice & zest, and coriander.

Season with salt and pepper. Mix well.

Step 3:

Let the salsa sit at room temperature for about 10–15 minutes. This will slightly soften the fruit and allow the flavours to meld.

Step 4:

Spoon generously over pulled pork tacos, grilled meats, or even nachos.
