Ingredients:

The cake

2-1/2 cups

FRÜT frozen cranberries

X3

big eggs

2 cups

granulated sugar

3/4 cup

unsalted butter, softened

1 tsp

of vanilla extract

2 cups

all-purpose flour

1 tsp

salt

Pecan topping (optional)

1/4 cup

unsalted butter

1/4 cup

packed dark brown sugar

1 cup

raw pecans

Method:

Step 1:

Preheat the oven to 180°C and lightly grease a 25cm pan.

Step 2:

In a mixing dish, combine the eggs and sugar until smooth.

Add the softened butter and vanilla extract.

Step 3:

Fold in the flour, salt, and frozen cranberries until thoroughly mixed.

Step 4:

To make the pecan topping, melt the butter in a skillet and then add the sugar and pecans. Cook until glossy and evenly covered.

Step 5:

Spread the cake batter in the prepared pan and, if desired, top with the pecan mixture.

Step 6:

Bake for 60–80 minutes, or until a toothpick inserted in the centre comes out clean. If you are using smaller pans, modify the baking time accordingly.

Step 7:

After baking, cool the cake for 20 minutes before removing it from the pan and letting it cool completely before serving.
