Cherry Strudel

Ingredients:

200g

Früt Frozen Red Cherries - Sour

200g

Früt Frozen Black Cherries - Sweet

3 tbsp

Unsalted butter

X2

Zest of whole lemons

1 cup

Sugar

1 tbsp

Cinnamon powder

X4

Large phyllo dough sheets

As needed

Powdered sugar for sprinkling

Method:

Step 1:

Preheat the oven to 190°C, allowing 5 minutes for this before you start.

Step 2:

Melt butter and finely grate lemon zest. Mix the zest with sugar and cinnamon in a small bowl with the frozen cherries.

Step 3:

Lay a dry tea towel on the work surface, on the short side nearest you. Unwrap the phyllo dough and lay a sheet on the towel.

Step 4:

Cover the remaining dough with a damp cloth so it does not dry out. Brush the sheet with butter and sprinkle with one-quarter of the cherry and sugar mixture.

Step 5:

Top with another layer of dough, butter it, and add filling. Continue until four sheets of dough and all the filling have been used.

Step 6:

Fold the dough corners nearest to you inward about 3cm. Pull upwards on the edge of the towel closest to you so the dough rolls into quite a tight cylinder.

Step 7:

Butter the baking sheet and transfer the roll onto it, seam-side down and brush the roll with butter.

Step 8:

Bake for 25-30 minutes, until crisp and brown, and a skewer inserted in the centre for 20 seconds is hot when withdrawn.

Step 9:

Serve hot or at room temperature. Just before serving, sprinkle generously with powdered sugar and cut into four diagonal slices with a serrated knife, discarding the ends.

Notes:

Flip the ends of the pastry up before baking to ensure all the cherry juice stays inside the roll and does not leak.
