Ingredients:

1½ cups

Mashed FRÜT frozen bananas

¼ cup

Canola/vegetable oil

1 tsp

Pure vanilla extract

X1

Large egg, at room temperature

¼ cup

Unsalted butter, melted & slightly cooled

1 ½ cups

All-purpose flour

1 tsp

Baking soda

½ tsp

Ground cinnamon

½ tsp

Salt

¾ cup

Packed light brown sugar

Optional

Frozen blueberries & chocolate chips

Method:

Step 1:

Preheat oven to 180°C
In a medium bowl, whisk together flour, baking soda, salt & cinnamon.

Step 2:

In a large bowl, mash up frozen bananas (use fork/masher/mixer), stir in melted butter & oil until combined, then stir in sugar, egg & vanilla extract until the mixture is smooth.

TIP: At this stage, you can add in any extras, such as chopped pecans, chocolate chips, or even blueberries.

Step 3:

Add dry mixture to the wet mixture – make sure not to overmix (this will lead to flat, heavy bread)
Butter a bread pan and pour the mixture into it.

Step 4:

Bake for 50-65 mins or until a toothpick inserted into the centre of the bread comes out clean.


Once ready, set the pan on a wire cooling rack for 10 minutes, remove the bread from the pan, and let it cool slightly before slicing.
