Ingredients:

The Stew

1 cup

FRÜT frozen celery

1 cup

FRÜT frozen spinach

can (400g) diced tomatoes

4 cups

vegetable broth

large onion, diced

X3

cloves garlic, minced

Salt and pepper to taste

2 tbsp

olive oil

X1

can (400g) cannellini beans, drained and rinsed

1 tsp

dried thyme

1 tsp

dried rosemary

X2

carrots, peeled and diced

X2

potatoes, peeled and diced

Optional

Fresh parsley for garnish

Main ingredient:

Frozen Celery Slices

Method:

Step 1:

Heat Oil:
In a large pot, heat the olive oil over medium heat.

Step 2:

Sauté Vegetables:
Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 3:

Add root vegetables:
Stir in the diced carrots and potatoes. Cook for about 5 minutes, stirring occasionally.

Step 4:

Add frozen vegetables:
Add the frozen celery and spinach to the pot. Stir to combine.

Step 5:

Incorporate Tomatoes and Broth:
Pour in the diced tomatoes and vegetable broth. Stir well.

Step 6:

Season and simmer:
Add the dried thyme, dried rosemary, salt, and pepper.

Bring the stew to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the vegetables are tender.

Step 7:

Add Beans:
Stir in the cannellini beans and let the stew simmer for another 10 minutes.

Step 8:

Serve:
Ladle the stew into bowls and garnish with fresh parsley if desired.
