Ingredients:

The Filling

½ cup

Früt cashew nuts, soaked overnight (or at least 2 hours)

½ cup

Früt Mixed Berries

2 tbsp

Rio Largo Lemon Olive Oil

2 tbsp

Honey

½

An avocado

1 tsp

Vanilla paste (or 2 tsp vanilla essence)

½ tsp

Salt

The Base

½ cup

Früt almonds

¼ cup

Dates

2 tbsp

Coconut oil

¼ tsp

Salt

Main ingredient:

Frozen Mixed Berries

Method:

Step 1:

Prepare the Base:

Blend almonds, dates, coconut oil, and salt in a food processor until it forms a sticky, crumbly texture.

Divide the mixture between 6 mini tart tins, pressing down to form the base.

Refrigerate for 30 minutes.

Step 2:

Make the Filling:

Blend soaked cashews, avocado, Früt Mixed Berries, olive oil, honey, vanilla, and salt until smooth and creamy.

Taste and adjust sweetness or salt as needed.

Step 3:

Assemble & Chill:

Scoop the berry mousse into the tartlet bases.

(Optional) Swirl extra blended frozen mixed berries on top for decoration.

Refrigerate for at least 1 hour before serving.
