Ingredients:

The salad

1/2 cup

Früt dried apricots

1/4 cup

Früt mixed nuts, chopped

1/4 cup

Früt seed mix

4 cups

Mixed greens (arugula, spinach, and baby kale)

1/4 cup

Crumbled feta cheese (optional)

X1/2

Red onion, thinly sliced

X1/2

Cucumber, sliced

1/2 cup

Cherry tomatoes, halved

The dressing

2 tbsp

Früt beetroot juice concentrate

3 tbsp

Olive oil

1 tbsp

Balsamic vinegar

1 tsp

Honey

1/2 tsp

Dijon mustard

Salt and pepper to taste.

Method:

Step 1:

Prepare the Salad:
In a large salad bowl, combine the mixed greens, dried apricots, chopped nuts, seed mix, red onion, cucumber, and cherry tomatoes.

Step 2:

Make the Dressing:
In a small bowl or jar, whisk together the beetroot juice concentrate, olive oil, balsamic vinegar, honey, Dijon mustard, salt and pepper, until well combined.

Step 3:

Assemble the Salad:
Drizzle the dressing over the salad and toss gently to combine.
Sprinkle the crumbled feta cheese on top, if desired.

Serve:
Serve immediately and enjoy the fresh, vibrant flavours of spring!
