1/2 cup

Früt frozen ginger, thinly sliced

1/2 cup

Rice vinegar (or white vinegar)

1/4 cup

Water

3 tbsp

Sugar

1/2 tsp

Salt

Method:

Step 1:

Prep the Ginger: Using a sharp knife, slice the frozen ginger as thin as possible. The slices will soften up quickly in the brine.

Step 2:

Make the Brine: In a small saucepan, combine rice vinegar, water, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and allow to cool for a couple of minutes.

Step 3:

Pickle the Ginger: Place the ginger slices in a glass jar and pour the warm brine over them until fully covered. Let it cool to room temperature.

Step 4:

Refrigerate: Seal the jar and place it in the fridge for at least 24 hours. The flavour will develop even more over time, but it’s ready to enjoy after one day.
