Lemon Roast Chicken

Ingredients:

Früt Frozen Lemon Segments

Whole chicken (about 1.5–2kg)

Cloves garlic, crushed

2 tbsp

Olive oil (or melted butter)

1 tsp

Salt

½ tsp

Black pepper

1 tsp

Paprika

A few sprigs of fresh Rosemary or Thyme

Method:

Step 1:

Prep the chicken: Pat the chicken dry with paper towels.

Step 2:

Season: Rub olive oil (or butter), garlic, salt, pepper, and paprika all over the chicken – inside and out.

Step 3:

Lemon: Place the frozen lemon wedges inside the chicken cavity. The lemons slowly thaw as the chicken roasts, releasing juices and flavour.

Step 4:

Roast: Place the chicken in a roasting tray with extra rosemary/thyme around it. Roast at 190°C for 1 hour 15 – 1 hour 30 minutes (or until juices run clear).

Step 5:

Rest & Serve: Let the chicken rest for 10 minutes before carving. Serve with roasted veggies or salad.
