Lamb Stew With A Twist

Lamb Stew With A Twist

Ingredients:

100g

Früt frozen sour cherries

X1

Onion (chopped)

500g

Lamb knuckle

Dusting

Flour

2 tbsp

Olive oil

X1

Garlic clove (crushed)

X1

Celeriac

½ tsp

Ground coriander

Salt and pepper

½ tsp

Mixed spice

100ml

Port wine

1 tsp

Lemon juice (to taste)

20g

Cold butter (cut into small pieces)

30g

Flaked almonds

X4

Pieces fresh thyme

Fresh chopped basil

Main ingredient:

Frozen Cherry - Sour

Method:

Step 1:

Prepare the Lamb:

Dust the lamb knuckle with a little flour, shaking off excess.
Heat 2 tablespoons of olive oil in a large pot over medium-high heat.

Step 2:

Sear the Lamb:

Add the lamb knuckle to the pot and brown on all sides. Season with salt and pepper.
Remove the lamb from the pot and set aside.

Step 3:

Sauté Onion and Garlic:

In the same pot, sauté the chopped onion and crushed garlic until softened and aromatic.

Step 4:

Add Spices and Celeriac:

Stir in ground coriander and mixed spice.
Peel and dice the celeriac, then add it to the pot, stirring to coat with the spices.

Step 5:

Return Lamb to Pot:

Return the seared lamb knuckle to the pot, along with any accumulated juices.

Add Cherries and Port Wine:

Add FRÜT Frozen Sour Cherries and pour in the port wine to deglaze the pot.

Step 6:

Simmer and Cook:

Cover the pot and let the stew simmer on low heat for about 1.5 to 2 hours, or until the lamb is tender and flavours have melded.

Step 7:

Finish the Stew:

Stir in lemon juice to taste.
Gradually add cold butter, stirring until the sauce is slightly thickened and glossy.

Step 8:

Toast Almonds:

In a dry skillet, toast flaked almonds until golden and fragrant. Set aside.

Serve:

Serve the lamb stew hot, garnished with toasted almonds, fresh chopped basil, and sprigs of thyme.
