Cape Malay Curry

Ingredients:

The Curry

Olive oil

X1

Brown onion, chopped

X2

Cloves garlic, crushed

2 tbsp

Diced ginger

3 tbsp

Cape Malay curry spice blend

500g

Butternut, cubed

1 cup

FRÜT frozen spinach

½ cup

FRÜT frozen apricots

1 cup

Red lentils

1 tin

Diced tomato

1 tin

Coconut milk

Salt

Main ingredient:

Frozen Apricot

Method:

Step 1:

In a large pot, fry the onion, garlic, and ginger in a glug of olive oil.

Step 2:

Once the onions are fragrant, add the curry spice, butternut, red lentils, diced tomato, and coconut milk.

Step 3:

Replace the lid and allow to simmer for 20 minutes until the butternut is cooked through, you can add a little water if you need to.

Step 4:

Before serving add in the frozen spinach, apricots and salt to taste, cook until the spinach and apricots are thawed and serve with fluffy basmati rice.
