
Ingredients:
- 1 cup quinoa
- 2 cups water
- ¼ sunflower seeds
- ½ cup dried apricots
- 1 ½ tbsp white wine vinegar
- 1 tsp dijon mustard
- ¼ cup chopped mozzarella
Instructions:
1. Bring water to a boil and add quinoa, cook for about 15-20 min and allow to cool once cooked.
2. Combine olive oil, vinegar and mustard in a small bowl and stir into cooled quinoa, then add chopped apricot, sunflower seeds (alt almonds, pumpkin seeds or mixed seeds) and mozzarella.
