
Ingredients:
- 1.5 cups frozen bananas
- 1/2 cup frozen blueberries
- 2 cups rolled oats
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract
- 2 teaspoons fresh lemon juice
- 3/4 cup plant milk (coconut/almond/soy)
- Extra berries or fruit for toppings
Method:
- Take bananas out of the freezer and let them thaw
- Add all ingredients except blueberries to the blender & blend until smooth (batter should be nice and thick)
- Stir in the blueberries
- Warm up a non-stick pan on a medium-high heat
- Scoop batter onto pan in equal servings; cook for ~3mins on either side
- Top with extra berries, fruit, and/or maple syrup, and enjoy!
