VEGAN GLUTEN-FREE BLUEBERRY FLAPJACKS

Ingredients:

  • 1.5 cups frozen bananas
  • 1/2 cup frozen blueberries
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 teaspoons fresh lemon juice
  • 3/4 cup plant milk (coconut/almond/soy)
  • Extra berries or fruit for toppings

Method:

  1. Take bananas out of the freezer and let them thaw
  2. Add all ingredients except blueberries to the blender & blend until smooth (batter should be nice and thick)
  3. Stir in the blueberries
  4. Warm up a non-stick pan on a medium-high heat
  5. Scoop batter onto pan in equal servings; cook for ~3mins on either side
  6. Top with extra berries, fruit, and/or maple syrup, and enjoy!
