
Ingredients:
- 1 cup frozen peaches
- ¼ cup rice vinegar
- 1 tablespoon minced spring onion
- 2 tablespoons olive oil
- ½ teaspoon grated fresh ginger
- ½ teaspoon soy sauce
- ½ teaspoon chili paste/mustard
- 1 teaspoon honey
- Salt & black pepper
Method:
- Blend/mix/combine all ingredients, excluding olive oil
- Slowly add in olive oil to mixture until well combined
Salad suggestion: caprese (mozzarella, tomato, basil) or chicken and peach salad
