VEGAN BANANA MUFFINS

Ingredients:

  • 1¼ cups mashed FRÜT frozen bananas
  • 1¾ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 pinch salt
  • 1¼ cups granulated sugar
  • ½ cup coconut oil, melted
  • ½ cup coconut/almond/soy/rice milk, slightly warm
  • ¼ cup light brown sugar, packed
  • 1 tbsp vanilla extract

Optional: sugar, cinnamon & FRÜT coconut chips for dipping

Method:

  1. Preheat oven to 200°C
  2. In a small bowl, mash the bananas (after having left them to defrost on the counter for)
  3. In a large bowl, stir together flour, baking powder, cinnamon, nutmeg & salt
  4. In a medium bowl, whisk together oil, milk, sugars & vanilla, then fold in bananas
  5. Pour wet mixture into dry mixture and stir until just combined (overmixing means thick, heavy muffins) – if batter looks too thick add some more milk
  6. Bake for about 15 mins, or until a toothpick inserted in the centre comes out clean
  7. Allow pan to cool for 10 mins before turning muffins out onto wire rack to finish cooling
  8. Mix together some cinnamon, sugar & coconut chips and dip the muffin tops
